We are thrilled to be testing version 3.0 of our sous vide app in anticipation of a mid-February app store release. 3.0 will be the biggest release we’ve done. SousVide Dash 3.0 is loaded with new features designed to help you understand exactly what’s going on as you cook. It helps you get the most out of sous vide cooking and avoid common problems that people have with the technique. While we are working on it, we thought we’d share a preview of some of the new features.
1. We created a Cooking Journal UI to replace some of the numbers in the old UI. All the same information, and more actually, is now presented chronologically as shown below.
2. Color-coded warnings in the Cooking Journal show you key issues with your current settings that you should be aware of before you begin cooking.
3. Clicking the info icon on a warning gives you a more detailed explanation and suggestions for changes you might want to make.
4. We added full support for extended cooking for tenderness. Choose how long you want to cook after reaching temperature to ensure the level of tenderness you are looking for. Because tenderness time is controlled independently of heating and pasteurization time, you can achieve more predictable results even when you change the size and shape of your product.
5. We added support for ice-bath cooling. Turn this on and SousVide Dash will not only tell you how long to cook your food, but also how long it will take to thoroughly chill the food after cooking.
6. We made the graph interactive. Now you can pinch to zoom in and out, swipe to scroll, and double tap to zoom out to the full cooking time. Here we see a full graph including heating and pasteurization on the left, extended cooking time for tenderness in the middle, and ice bath cooling on the right.
For more detail, we can zoom in wherever we want. Here we are looking at the early part of the process where temperature is rising and pathogens are being reduced.

With all these new features, we’ve got plenty of additional testing to do, but we are confident you are going to love SousVide Dash 3.0.
